Ingredients:

  • Prepare Marination
    • 1 KG Chicken
    • 1½ Cup Yogurt
    • 4 Tbsp Ginger garlic (Crushed)
    • Green Chili Paste (10-12 Chilies)
    • Salt As per Taste
    • 1 Tbsp Red Chili Powder
    • 1 Tbsp Turmeric Powder
    • 1½ Tbsp Caradon Powder
    • 1 Tbsp All Spice Powder
    • 1 Cup Fried Onion (Crushed)
    • 1 Cup Coriander Leaves
    • 1 Cup Mint Leaves
    • 1 Tsp Vinegar
    • ¼ Tsp Saffron
  • Prepare The Rice
    • 1 KG Rice
    • 4 Litre Water
    • 1 Tbsp Whole Mixed Spices
    • Salt As per Taste
  • For Layering
    • 1 Cup Oil
    • ½ Cup Fried Onion
    • 2-3 Pinch Caradon Powder
    • Green Chilies 4-5
    • 1 Tbsp Yellow Food Color (Dissolved in milk)
    • ½ Tbsp Ghee

Instructions:

1.In a large bowl, combine chicken, crushed ginger garlic, red chili powder, turmeric powder, Caradon powder, green chili paste, saffron, salt, all spice powder, vinegar, coriander leaves, fried onion, mint leaves, and yogurt.
2. Mix well and marinate the chicken for 2-3 hours.
Preparing the Rice:
3. In a separate pot, bring 4 liters of water to a boil.
4. Add whole mixed spices and salt to the boiling water.
5. Add the rice to the boiling water and cook until the rice is 60-70% cooked.
6. Drain the rice and set aside.
Layering the Biryani:
7. In a large heavy-bottomed pot, heat 1 cup of oil.
8. Add the marinated chicken to the pot and spread it evenly.
9. Layer half of the partially cooked rice over the chicken.
10. Sprinkle fried onions, a pinch of Caradon powder, and 4-5 green chilies on top of the rice.
11. Layer the remaining rice on top.
12. Dissolve yellow food color in milk and drizzle it over the rice.
13. Dot the top with ghee.
14. Cover the pot with a tight-fitting lid and cook on low flame for 40-50 minutes, allowing the biryani to cook in its own steam until the chicken is cooked through and flavors meld together.
15. Your Hyderabadi Dum Biryani is ready!
